Most alcohol-free spirits begin with an infusion — herbs steeped in water, flavours added after the fact. We begin somewhere entirely different.
Every Niets spirit is first crafted as a true distillate — botanicals, molasses, citrus — distilled in copper stills using the same techniques that have defined the world's great spirits houses for centuries. Only then do we remove the alcohol, using a precision cold extraction process that preserves every layer of flavour, aroma and complexity we built.
What remains is not a substitute. It is the spirit itself — with nothing but the alcohol removed.

Niets began with George Niets — a Belgian botanist whose research shaped both distillation and perfumery at the end of the 19th century. Over a century later, his great-great-grandson Alexandre revived that legacy, fusing 125 years of heritage with a radical idea: what if you kept everything that makes a great spirit — the flavour, the ritual, the craftsmanship — and removed only the alcohol?
